Why Subotica looks the way it does

The town prospered at the end of the nineteenth century and the start of the twentieth, when it was part of Austria-Hungary and an important trading centre on the road between Budapest and Belgrade. That money translated into a building campaign in a style that had only just appeared: the Hungarian Secession.

Floral motifs are the signature of the Hungarian Secession. Photo: Pexels

This is neither French Art Nouveau nor German Jugendstil. The Hungarian Secession mixes European curved forms with folk motifs from Transylvania and the Pannonian plain, with coloured glazed ceramic from the Zsolnay works in Pécs, and with roofs that look stitched rather than built.

Illustrative image of a Secession apartment block. Photo: Pexels

The ethnic makeup explains the rest. The town has a large Hungarian community alongside Serbs and Bunjevac Croats, and the signs are in three languages. It is a border place in the most literal sense.

The buildings worth the trip

They are all in the centre, minutes apart on foot. Half a day covers everything, but the interiors deserve longer.

The town hall, 1908 to 1912, by Marcell Komor and Dezső Jakab: the most important building in town, with a council chamber glazed by Miksa Róth and a tower you climb for the view.

The synagogue, 1901 to 1902, by the same architects: one of the finest surviving Art Nouveau synagogues in Europe. It was restored over nearly two decades and reopened a few years ago.

Raichle Palace, 1904: built by the architect Ferenc Raichle as his own house, with the most exuberant facade in town. Now a modern art gallery.

The Blue Fountain on the main square, rebuilt to the original design.

The National Theatre, recently reconstructed, with the neoclassical portico preserved.

The town library and a run of Secession apartment blocks scattered along the side streets.

The synagogue deserves separate mention. It was built for a community of several thousand people that was almost entirely destroyed in the Holocaust. The building then stood decaying for decades, and its restoration became an international project. Today it functions both as a place of worship and as a cultural venue.

Palić, the lakeside resort

Eight kilometres from town lies Palić, a resort built around a lake at the beginning of the twentieth century, with an ensemble of Secession buildings put up almost all in 1912.

The water tower at the entrance survives, along with the Grand Terrace, the music pavilion and the former women bathing house, all in the same style. It is an unusually coherent ensemble, planned from the start as a resort rather than assembled over time.

The lake is small and shallow and the water is nothing special. You come for the architecture, the surrounding park and the restaurants on the shore. A European film festival is held here in summer.

What you eat on the border

The cooking is overwhelmingly Hungarian, which surprises visitors to Serbia who expected grilled meat.

Halászlé, the river fish soup heavy with paprika, cooked in a kettle. Competitions are held for it across the region.

Paprikás with dumplings, in the local version.

Lángos, fried flatbread with sour cream and cheese, eaten standing up.

Kürtőskalács, the chimney cake baked on a spit.

Prices are among the lowest in the region: a full meal rarely passes ten to twelve euros a head, and decent accommodation in the centre starts at thirty euros a night.

The town pairs naturally with Szeged in Hungary, which shares the same Secession heritage and lies under an hour across the border. Both were rebuilt in the same period by the same architects, and the difference between them is instructive.

The border crossing is quick out of season but can take time on summer weekends. Serbia is not in the European Union, so documents are checked, and a Green Card is needed if you drive your own car.

Visitor information is published by the town tourist office, and national context by the national tourism organisation of Serbia.

Subotica holds the best Art Nouveau architecture in Serbia and some of the best in Central Europe, built by a border bourgeoisie in a style only a few years old at the time.

Give it a full day, go inside the town hall and the synagogue rather than past them, walk out to Palić, and pair the visit with Szeged across the border.

What Fruška Gora is and why wine is made here

The hill is small: the highest point barely passes five hundred and thirty metres. What matters is that it is the only relief in a flat plain for hundreds of kilometres, which gives it sunny slopes, good drainage and a sheltered microclimate.

Viticulture here is documented from the Roman period. The emperor Probus, born at Sirmium, the Roman town on the site of present day Sremska Mitrovica, is credited with lifting the ban on planting vines in Pannonia in the third century. A local red grape carries his name.

The national park was declared in 1960, the first in Serbia. It covers the wooded ridge, while the vineyards lie mostly on the lower slopes, towards the Danube.

Bermet and the other local wines

The absolute speciality of the region is called bermet and is made only at Sremski Karlovci. It is an aromatised sweet wine, macerated with over twenty herbs and spices to family recipes kept strictly private. It carries a protected designation and is not produced industrially.

The taste is unusual: somewhere between vermouth and a spiced sweet wine, with notes of wormwood, cinnamon and dried fruit. It is drunk cold, in small quantities, as an aperitif or after a meal. Local tradition holds that it was served at the Habsburg court and that it appeared on the wine list of the Titanic.

Grašac, known internationally as Welschriesling: the dominant white, dry and fresh.

Traminac, aromatic and very popular locally.

Frankovka and portugizer, the two base reds.

Probus, a red variety bred in Serbia and named after the Roman emperor.

Neoplanta, another locally bred variety, named after the Latin name of Novi Sad.

Small wineries are the rule rather than the exception. Many take visitors by telephone appointment, and tastings are cheap and generous. A good bottle direct from the producer costs between five and twelve euros.

Sremski Karlovci, the town at the foot of the hill

It is the prettiest small town in Vojvodina and the natural starting point for any wine route. It has around eight thousand residents and a compact Baroque centre gathered around a single square.

Why the chapel has four doors
The Treaty of Karlowitz of 1699 ended a war between the Ottoman Empire and a European coalition and marked the start of the Ottoman withdrawal from Central Europe. The negotiations were conducted with extreme concern for protocol: no delegation would agree to enter the room second, because it would have implied accepting a hierarchy. The solution was a round building with four doors, through which the four delegations entered simultaneously. The chapel later raised on the site keeps the shape. It is the finest example of architecture born out of a problem of diplomatic pride.

The sixteen monasteries

On the wooded slopes stand sixteen Orthodox monasteries, most raised in the fifteenth and sixteenth centuries, after the Serbian nobility fled north of the Danube ahead of the Ottoman advance. The area is known locally as the Serbian Holy Mountain.

All are working monasteries with monastic communities, and access is free with modest dress. Opening hours are limited and they close during services. Three or four can be visited in a day, by car, on surfaced forest roads.

The region is small, and everything can be done with a base in Novi Sad or, better still, in Sremski Karlovci itself.

A reasonable first day: the morning in Sremski Karlovci on foot, with the square, the chapel and the honey museum. The afternoon at two wineries in the area, with transport arranged, because you do not drive after a tasting. The evening back in Novi Sad.

The second day: by car along the ridge, taking in three monasteries and a viewpoint, then Petrovaradin, the fortress across the Danube from Novi Sad, with sixteen kilometres of underground galleries and a clock whose hour and minute hands are reversed in size, so the time can be read from the river.

Novi Sad was European Capital of Culture in 2022 and the centre was renovated for it. It deserves an extra evening, particularly the Podbara quarter and Danube Street.

September and October are the best months: the harvest, mild weather and the forest turning on the ridge. Summer is hot on the plain, and in winter many small wineries cut their hours.

Serbia is not in the European Union, so documents are checked at the border and a Green Card is needed if you drive your own car.
